INGREDIENTS
- 4 poached boneless skinless chicken breasts
- 1 jar of Eat This Yum Meyer Lemon Lavender Marmalade
- 1 cup of cooked quinoa
- 1 cup of yogurt or mayonnaise
- 1 cup of chopped Italian parley
- 1 scallion finely sliced for garnish
- 4 leaves of washed romaine
- salt and pepper to taste
INSTRUCTIONS
- Place 4 plates in freezer
- Dice poached chicken into bite-sized pieces
- Toss in a bowl with 1/2 a jar of Eat This Yum Meyer Lemon Lavender Marmalade quinoa, yogurt or mayonnaise, and parsley
- Season with salt and pepper
- Place 1 leaf of washed romaine on chilled plate
- Place 1 scoop of chicken salad on top of romaine
- Garnish with scallion
