INGREDIENTS

  • 4 poached boneless skinless chicken breasts
  • 1 jar of Eat This Yum Meyer Lemon Lavender Marmalade
  • 1 cup of cooked quinoa
  • 1 cup of yogurt or mayonnaise
  • 1 cup of chopped Italian parley
  • 1 scallion finely sliced for garnish
  • 4 leaves of washed romaine
  • salt and pepper to taste

 

INSTRUCTIONS

  • Place 4 plates in freezer
  • Dice poached chicken into bite-sized pieces
  • Toss in a bowl with 1/2 a jar of Eat This Yum Meyer Lemon Lavender Marmalade quinoa, yogurt or mayonnaise, and parsley
  • Season with salt and pepper
  • Place 1 leaf of washed romaine on chilled plate
  • Place 1 scoop of chicken salad on top of romaine
  • Garnish with scallion
