Preheat your oven to 375°F (190°C).

In a mixing bowl, combine the brioche bread crumbs, chopped onion, minced garlic, chopped parsley, salt, and pepper. Mix well to incorporate the ingredients evenly.

Using a sharp knife, make a horizontal slit in each pork chop to create a pocket for stuffing. Be careful not to cut all the way through.

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed pork chops and sear on each side until golden brown, about 3-4 minutes per side.

Transfer the seared pork chops to a baking dish and place in the preheated oven. Bake for 20-25 minutes or until the pork chops are cooked through and reach an internal temperature of 145°F (63°C).

While the pork chops are baking, heat the Eat This Yum Orange Saffron Cardamom Marmalade in a small saucepan over low heat until melted and warm.

Once the pork chops are done baking, remove them from the oven and brush each chop generously with the warmed Eat This Yum Orange Saffron Cardamom Marmalade glaze.
